- 2 Leeks (sliced and washed)
- 1 cup Bacon (diced)
- 1 ½ Tbsps Corn starch
- 1 ½ cups double cream
- 1 ½ cups Whole milk
- 3 eggs
- 2 egg yolks
- 2 ½ Tbsps butter
- 2 Tbsps olive oil
- ½ cup dried breadcrumbs
- salt (to taste)
- peppers (to taste)
- 1 sprig thyme (or fresh herbs, to garnish)

Preparation steps

Preheat the oven to 240°C | 450F | gas 8.

In a salad bowl mix the whole eggs, 2 egg yolks, cornflour, milk, cream and salt and pepper. Beat together well until completely mixed and silky smooth.

In a frying pan, heat the olive oil until spitting then over a low heat, add a little salt and pepper and the leeks and cook until soft and starting to brown. This should take 12-15 minutes

About 5 minutes through cooking, add the bacon to the pan and mix with the leeks, continue to cook for 7-8 minutes.

Once cooked, remove from the heat and mix into the batter mixture. Butter a large ovenproof dish, sprinkle some breadcrumbs in the bottom.

Pour in the leek/bacon/batter mixture. Sprinkle some more breadcrumbs over the top and cook in the middle of the oven for 40 minutes.
7.
Remove from the oven, garnish with the sprig of herbs and serve with fresh vegetables of a garden salad and light white wine.
