Baked Macaroni and Ham with Creamed Spinach
For the baked macaroni and ham: Preheat the oven to 200°C (approximately 400°F) convection. Cook the pasta in boiling salted water until al dente, drain, rinse under cold water and drain again. Grease 8 wells of a muffin pan with butter. Cut the ham into strips and use to line the muffin wells. Fill with macaroni and sprinkle with cheese. Bake for around 10 minutes, until golden brown.
Meanwhile, for the creamed spinach: Trim the spinach, rinse and shake dry. Peel the garlic and mince. Melt the butter in a saucepan and sauté the spinach and garlic until the spinach wilts. Add the cream and cook over low heat for about 5 minutes. Purée and season with salt and pepper. Serve with the baked macaroni.
