- 600 grams Spinach
- 1 small onion
- 2 Tbsps butter
- 2 tsps Pastry flour
- 200 milliliters Whipped cream
- 100 grams Sour cream (or creme fraiche to taste more)
- salt
- peppers
- Nutmeg (freshly grated)
Preparation steps

Rinse and dry the spinach, then coarsely chop. Peel and finely dice the onion.

Melt the butter, and sweat the onion. Add the spinach, over, and cook over medium heat.

Dust with the flour, and stir in the cream. Bring to a boil and season to taste with salt, pepper, and nutmeg. Stir in the sour cream, adjust the seasoning if necessary, and serve.
