- ¼ cup olive oil
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- non-stick cooking spray
- 12 eggs

Preparation steps

Preheat oven to 450º F/ 230º C.

Cut potatoes into 1/4-inch oval slices. Place in a large bowl; drizzle with oil. Season with salt and pepper and toss until potatoes are well coated with the oil.

Arrange potatoes in a single layer on an ungreased baking sheet. Bake for 20-25 minutes or until golden brown, turning once.

Lower oven to 350º F / 175º C. Lightly spray each spot of an oval muffin tin with non-stick cooking spray.

Crack an egg into each muffin spot. Bake for 15 to 20 minutes.
8.
Place one egg onto one potato slice. Place on a platter and serve.
