Baked Crispy Mushroom Cups

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and grease an oven-proof dish with butter.
Heat 1 tbsp butter and fry the chopped mushroom stalks, bacon, onion and garlic for 1-2 minutes. Transfer to a bowl and leave to cool slightly.
Add the breadcrumbs, 2 tbsp butter, half of the cheese and the herbs. Season with salt and ground black pepper and mix thoroughly. Spoon the filling into the mushrooms and place in the dish. Make a small well in the centre of each mushroom and break an egg into it. Sprinkle over the rest of the cheese and dot with the remaining butter.
Bake in the oven for approx. 30 minutes until golden brown.
