4 Chicken breasts (each about 140 grams)

2 Tbsps olive oil
400 grams Cherry tomatoes
2 garlic cloves
1 tsp dried oregano
1 tsp lemon juice
150 grams grated Mozzarella
2 Tbsps coarsely cut Basil

Preparation steps

1.

Rinse chicken breasts, pat dry and season with salt and pepper. Heat 1 tablespoon of oil in a pan and cook chicken until golden brown on both sides. Remove from the pan.

Grease gratin dish with remaining oil.

Rinse and halve tomatoes. Peel garlic and cut into thin slices. Arrange tomatoes and garlic in gratin pan. Sprinkle with oregano and season with salt, lemon juice and pepper. Place chicken on top and sprinkle with mozzarella. Season with salt and pepper and bake in preheated oven at 180°C (approximatley 350°F) for about 25 minutes or until golden brown.

Remove from the oven and serve garnished with basil.
