1 Sea bream (about 1 to 1.2 kg oven-ready)
500 grams potatoes
2 Tbsps parsley (finely chopped)
50 grams Parmesan (freshly grated)
3 garlic cloves
10 Tbsps olive oil
salt
freshly ground peppers

Preparation steps

1.

Peel the potatoes, cut into slices and blanch in boiling salted water for about 5 minutes. Drain, allow to rest and slice.

2.

Mix parsley with about 8 tablespoons oil.

3.

Place half of the potatoes in a baking dish coated with the remaining oil, season with salt and pepper and sprinkle with a little of the parsley oil and half the cheese.

4.

Place the fish on the potato slices, season with salt and pepper and sprinkle with a bit of parsley oil. Arrange remaining potato slices on top, season again with salt and pepper. Drizzle with the remaining oil and sprinkle the remaining cheese on top.

5.

Bake in a preheated oven (220°C) (approximately 425°F) for 25 minutes.
