4 eggs
4 Tbsps liquid honey
300 grams Greek Yogurt (0.1% fat)
½ Vanilla bean
1 ½ Tbsps cornstarch
butter (for molds)
Pastry flour (for molds)
300 grams mixed Berry (such as raspberries, blueberries, currants, strawberries blackberries)
100 grams peeled, whole almonds
2 Tbsps powdered sugar

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Beat the eggs and mix with honey, yogurt, vanilla and cornstarch. Spoon the yogurt into 4 ovenproof, slightly buttered and floured ramekins and place in a larger, rimmed pan. Pour hot water into the larger pan, so that the molds are half in the water. Bake in preheated oven for about 20 minutes.

Meanwhile rinse the berries and possibly chop. Roast the almonds in a hot frying pan until golden yellow. Remove from pan, allow to cool and chop. Spread the fruit on the yogurt and sprinkle with almonds and powdered sugar and serve.
