½ lemon (juice)
200 milliliters Apple juice
50 grams blanched almonds
4 Tbsps honey

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Mix raisins and cranberries with orange juice. Coat a roasting pan with 1 tablespoon butter. Rinse and dry apples. Cut a lid off the top of each apple and set aside. Use a spoon to scoop out core and seeds and discard. Scoop out apple flesh, leaving only a narrow edge. Cut apple flesh into small cubes. Place hollowed out apples in roasting pan. Toss apple cubes with remaining lemon juice. Chop half the raisins and cranberries and mix with the diced apple. Fill apples with fruit mixture, and replace apple lids. Brush apples with remaining butter. Pour apple juice over apples and bake about 40 minutes. Combine remaining raisins and cranberries with almonds and honey.

To check for doneness, prick apples with a paring knife. Apples should be soft. Remove from oven. Remove apple lids and top apples with nut and dried fruit mixture. Serve with vanilla ice cream, if desired.
