½ tsp Juniper Berry
½ tsp dried thyme
½ tsp peppercorns
2 Tbsps honey
4 onions (roughly diced)
4 Apple (cut into wedges)
1 cup dried Apricot (roughly chopped)
2 cloves garlic cloves (roughly diced)
53 ozs pork crackling loin (fat scored with a diamond pattern)
cup Meat stock

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.
2.
In a mortar, crush the juniper berries, thyme and peppercorns, and mix with the warmed honey.
3.
Arrange the onions, apples, apricots and garlic in the roasting bag or film, according to the manufacturer's instructions, and position the meat on top. Smear the honey and spice mixture over the skin, season with salt and pour in the stock. Seal the bag.
4.
Roast in the oven for around 90 minutes.
