- 3 cups Scallop
- salt (to taste)
- freshly ground Black pepper (to taste)
- 8 slices Bacon
- For Salad and Dressing
- 2 Tbsps olive oil
- 2 Tbsps fresh lemon juice
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ½ cups ripe Grape tomato (washed and halved)
- Arugula (rinsed and dried)

Preparation steps

Preheat oven broiler.

Rinse scallops under cold running water and pat dry with paper towels. Season to taste with salt and pepper.

Cut bacon strips in half. Wrap a bacon slice around each scallop and secure with a wooden tooth. Cook under the broiler until the scallops are golden and the bacon is done to desired crispness, about 5 to 6 minutes, turning if necessary.

In a small bowl, combine olive oil, lemon juice, salt and pepper. Toss grape tomatoes and arugula with desired amount of dressing. Serve arugula salad with bacon wrapped scallops.
