Preparation steps

Cut along one side of the dates and remove pits.

Toast walnuts in a dry skillet, let cool and chop coarsely.

Rinse sage, shake dry, pluck leaves and finely chop.

Cut the prosciutto into 12 pieces and wrap each around a date. Place wrapped dates, cut side up, on a baking sheet. Bake in preheated 200°C (fan not recommended, gas mark 3) (approximately 400°F) until sizzling, about 12 minutes.

Rinse the baby greens and spin dry. Squeeze juice from lemon and put 1 tablespoon juice in a small bowl. Season with salt and pepper and whisk in the olive oil. Toss salad with the dressing and serve alongside the dates.
