- 1 ripe Avocado
- 6 garlic cloves
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- 2 fresh egg yolks
- 350 milliliters olive oil

Preparation steps

Halve the avocado, remove the seed, and scoop out the pulp with a spoon. Add to a mixing bowl, and beat until smooth with a hand mixer.

Peel the garlic, and pass through a press into the bowl. Mix in the egg yolks, and season to taste with salt and lemon juice. Gradually incorporate the oil in a thin stream, mixing constantly. Mix enough oil until a thick and creamy sauce forms. Season the sauce with salt and pepper and serve.
