Preparation steps

Whip the cream. Pick through the crabmeat for shells. Rinse, peel, and segment the grapefruit collecting any juice in a bowl. Squeeze the pulp. Halve, remove the core, and slice 1 of the avocados into 8 pieces for garnish. Mix with a little grapefruit juice. Mash the other avocado with a fork. Peel and finely chop the shallot. Add the carbmeat (minus 2 tablespoons), the shallots, and the mashed avocado to the whipped cream (saving a small amount for garnish). Season the mixture with the grapefruit juice, salt, and pepper.

Divide into cups and garnish with the avocado slices, remaining crabmeat, and grapefruit segments. Top each glass with a dollop of the remaining whipped cream.
