- 200 grams Pulp (of an avocado)
- 2 Tbsps lemon juice
- 250 grams Spinach
- 1 Tbsp Caper
- 1 Tbsp Mayonnaise
- 100 grams red Bell pepper
- 2 slices white bread
- salt

Preparation steps

Purée the avocado flesh and immediately mix with lemon juice and season with salt and pepper.
Trim and rinse the spinach and blanch in salted water for 2 minutes. Remove and drain well.
Chop the capers and mix with 1 tablespoon of the capers liquid and the mayonnaise.

Trim and rinse the bell peppers and cut into thin strips.
Remove the crusts from the bread and spread with avocado purée and caper mayonnaise. Cover with spinach and lay pepper strips on top. Roll up the bread into parcels and cut in half before serving.
