Preparation steps

1.

Rinse asparagus thoroughly and snap off ends. Bring a pot of salted water to a boil. Add a pinch of sugar and asparagus. Cook about 12 minutes. Remove and drain.

To make the sauce: In a bowl set over a pan of simmering water, combine lemon juice with egg yolks. Whisk until frothy. Drop by drop, whisk in melted butter until the sauce is creamy. Season with salt and pepper. Stir in sour cream.

Serve asparagus topped with sauce.
