Preparation steps

Rinse Shiro Kanten in water and then tear into small pieces. Soak for about 30 minutes in cold water, drain, squeeze out and boil with 200 ml (approximately 7 ounces) of water over medium heat, stirring until it is dissolved. Strain through a sieve into another saucepan and return to a boil.

Mix in matcha tea powder, sugar and salt and stir until sugar has dissolved. Remove from heat and let cool until lukewarm. Rinse a square pan with cold water, pour in mixture and smooth out. Leave to set for at least 1 hour. Cut jelly into about 2 cm (approximately 3/4 inch) cubes and turn freely in matcha tea powder and serve.
