- 4 cups skinless Cod (cut into large chunks)
- 1 ½ cups sugar Snap pea
- 2 scallions (sliced diagonally)
- salt
- Black pepper
- 1 ⅔ cups Coconut milk
- ½ tsp Nutmeg
- 1 Lime (sliced into rings)

Preparation steps
1.
In a large saucepan, heat the coconut milk and nutmeg over a medium heat for 2 minutes.
2.
Add the chunks of cod and poach in the coconut milk for 10-12 minutes.
3.
Meanwhile, blanch the sugar snap peas in a saucepan of boiling salted water for 1 minute. Drain and keep warm.
4.
Combine the sugar snap peas with the spring onion and season.
5.
Once the cod is springy to the touch and cooked, arrange in bowls with the sauce alongside the sugar snap pea and spring onion salad.
6.
Season with salt and black pepper and serve with a couple of slices of lime.
