4 scallions
2 Fennel bulb
2 centimeters ginger
1 Tbsp lemon juice
3 Tbsps soy sauce

Preparation steps

Thaw the crayfish. Rinse scallions and slice the green parts diagonally; cut the whites into 3-4 cm (approximately 1 1/2-inch) long strips. Rinse the fennel and cut into 3-4 cm (approximately 1 1/2-inch) long strips. Peel the ginger and cut into small cubes, then mix with the lemon juice and soy sauce. Add the thawed crayfish. Marinate about 30 minutes.

Heat the oil in a frying pan or wok and sauté the vegetables for 3-5 minutes. Add 3-4 tablespoons water and bring to a boil over high heat. Add the crayfish meat and sauté, stirring, 3 minutes. Season with soy sauce and lemon juice to taste. Arrange on plates and garnish with lettuce or herbs, if desired.
