- 2 scallions
- 2 garlic cloves
- 1 pc ginger (2.5-3 cm)
- 1 tsp salt
- 1 tsp sugar
- 2 Tbsps Rice vinegar
- 1 Tbsp Lime juice
- 3 Tbsps Rice wine
- 2 Tbsps Chile oil
- 4 Tbsps olive oil
- 1 smaller Napa cabbage
- 2 handfuls Fresh herbs (Coriander, chives, parsley)

Preparation steps

For vinaigrette, trim, rinse and chop the scallions. Peel the garlic and ginger and dice finely. Pound everything together in a mortar with salt and sugar. Mix with vinegar, lime juice, rice wine and two oils. Remove Chinese cabbage leaves, rinse and shake dry. Cut or tear bite-sized. Rinse the herbs, shake dry and pluck the leaves from the stems. Mix the cabbage and herbs with the vinaigrette and serve immediately.
