Asian Noodles with Chicken and Mushroom
Pat dry the mushrooms with paper towels, rub and cut into thick slices. Cut out the scallion whites, trim and peel. Rinse and cut the scallion greens into small rings. Rinse the bell pepper, cut into quarters, remove seeds and ribs, and cut into small cubes. Peel the garlic and finely chop.
Rinse the chicken breast under cold water, pat dry and cut crosswise into very thin strips.
Heat oil in a pan and fry the chicken breast strips, mushrooms, scallion whites and garlic in it over medium heat for about 3 minutes, stirring frequently. Season well with salt and pepper, remove from heat and keep warm until the noodles are cooked.
Cook the noodles according to package directions. Drain the noodles and mix with chicken breast strips and vegetables. Arrange on preheated plates and serve.
