- 400 grams Pasta (such as spiral noodles)
- salt
- 400 grams Chicken breasts (ready to cook, skinless)
- 300 grams mixed Mushrooms (such as Shiitake mushrooms or others)
- 1 shallot
- 1 garlic clove
- 2 Tbsps olive oil
- 100 milliliters Chicken broth
- 2 Tbsps Whipped cream
- freshly ground peppers
- 40 grams freshly grated Parmesan
- 2 Tbsps finely chopped parsley
Preparation steps

Cook the pasta in boiling salted water until al dente.

Rinse the chicken, pat dry and cut into bite-size pieces. Clean the mushrooms and chop. Peel the shallot and garlic and chop finely. In a hot pan with the oil, cook the meat on all sides. Remove and set aside. Sweat the shallot with the garlic in the drippings until translucent. Add the mushrooms and cook, turning occasionally, until the resulting mushroom liquid has evaporated. Lay the meat back in, pour in the broth and cream, season with salt and pepper and let simmer for about 5 minutes over medium heat.

Drain the pasta, add to the pan with half the Parmesan and arrange on warmed plates. Serve garnished with the remaining Parmesan and chopped parsley.
