- 1 Red chili pepper
- 1 garlic clove
- 1 pc fresh ginger (about 1.5 cm) (approximately 1/2 inch)
- 400 grams ground pork
- 1 Tbsp green Curry paste
- 4 Tbsps freshly chopped cilantro
- 1 Tbsp freshly chopped mint
- Sea salt
- peppers
- 1 Tbsp olive oil
- 300 grams Asian-style Egg noodle
- 1 tsp sesame oil
- 1 Tbsp soy sauce
- fresh mint (for garnish)
- Lime wedge (for serving)
Preparation steps

Rinse the chile, cut in half, remove the stem, seeds and pith and finely chop. Peel the garlic and ginger and finely dice. Mix the pork with the curry paste, garlic, ginger, 1/2 the chiles, 2 tablespoons cilantro and the mint and season with salt and pepper. Form into small meatballs and sear in the hot oil for 5 minutes, until golden brown.

Cook the noodles according to the package directions, drain then toss with the sesame oil, soy sauce and remaining chile and cilantro in a hot pan.

Serve the meatballs and noodles on serving plates with the fresh mint and lime wedges.
