6 Tbsps Lime juice
1 Tbsp Fish sauce
2 tsps sugar
4 Chicken breasts (skinned)
11 ozs Rice noodles
3 Tbsps olive oil
1 carrot
1 small Zucchini
1 cup mint
1 red chili pepper (deseeded and chopped)
To garnish
Lime zest

Preparation steps

1.
Mix 3 tbsp of the lime juice, the fish sauce and sugar and rub into the chicken breasts. Leave to marinate for about 30 minutes, turning from time to time.
2.
Cook the noodles in plenty of boiling, salted water until al dente, then drain, rinse thoroughly and set aside.
3.
Cut the the carrot and courgette lengthwise into thin ribbons, using a mandolin slicer or vegetable peeler.
4.
Mix 1 tbsp oil with the remaining lime juice and mix into the noodles, carrots, courgette and mint leaves and divide between 4 bowls.
5.
Take the chicken out of the marinade, heat the remaining oil in a frying pan and fry the chicken for about 5 minutes each side.
6.
Slice the chicken breasts across thickly and arrange on the noodles. Sprinkle with the chopped chilli and garnish with lime zest.
