Arugula Gorgonzola Burger

- 1 cup Gorgonzola (cubed)
- 0.333 cup Sour cream
- 4 small Sirloin steak
- 2 Tbsps vegetable oil
- 4 semolina Burger buns
- 1 small Cucumber (thinly sliced)
- 2 large, yellow tomatoes (finely sliced)
- 2 Tbsps flat-leaf parsley (chopped)
- 2 cups Arugula
- 1 cup Alfalfa sprouts
- freshly ground Black pepper

Let the steaks cook for a couple more minutes for well-done meat.
Mash together the Gorgonzola with a fork and stir together with the sour cream.
Heat the oil in a large frying pan set over a high heat until hot. Season the steaks and fry for 4 minutes, undisturbed. Flip and cook for a further 4 minutes until firm yet slightly springy to the touch.
Remove them from the pan and cover loosely with foil, letting them rest for 5 minutes. Slice into strips.
Slice each bun in half and spread both halves with the Gorgonzola cream. Top with slices of cucumber and tomato, the sliced steak, parsley, rocket and shoots. Place the bun lid on top and secure in place with a wooden skewer.
