Preparation steps

1.

Rinse the lime under hot water and pat dry. Finely grate the zest and squeeze the juice. Rinse the arugula, spin dry, trim and rough chop. Transfer to a blender along with the lime juice, lime zest, honey and ice cubes and pulse until the texture of a granita. Distribute between 4 serving glasses, garnish with arugula and lime slices and serve immediately.
