3 scallions
1 handful parsley
10 grams breadcrumbs
2 Tbsps olive oil

Preparation steps

Rinse artichokes, remove stems, peel away hard leaves and break off hard leaf tips. Bend leaves. Drizzle with lemon juice. Boil for 10 minutes in boiling salted water.

Preheat oven to 200°C (approximately 400°F).

Cut smoked ham into thin strips. Rinse scallions and cut into thin rings. Rinse parsley, shake dry and chop leaves. Mix ham, scallions, parsley and breadcrumbs together. Season with a little lemon juice, salt and pepper. Bend artichoke leaves apart and slide stuffing between leaves. Grease a baking dish with 1 tablespoon of oil. Place artichokes in and brush with remaining oil. Bake for 15 minutes. Serve hot.
