Preparation steps

Preheat oven to 220°C (approximately 425°F).

For the dough, sieve flour into a bowl and mix in dry yeast, salt and sugar. Add hot water slowly, stirring constantly. Add oil in between water. Use only as much water as needed to make dough smooth and elastic. Dust work surface with flour and knead dough with heel of your hand for 5 minutes. Knead into a round shape, place back in bowl, cover with a towel and leave at room temperature for 45-60 minutes.

For the pizza sauce, peel onion and garlic. Dice both finely and saute in hot oil until translucent. Add tomatoes and herbs. Simmer over medium heat for 15-20 minutes while stirring occasionally.

Cut ham into pieces and cut anchovies into strips. Rinse mushrooms and cut into 1/2 cm (approximately .25 inch) thin slices. Drain artichokes in a sieve and cut into quarters. Rinse bell pepper, cut into quarters, remove seeds and ribs and cut into strips. Brush pizza pans with oil. Divide dough into 4 parts. Roll each out onto a floured surface in a similar size and shape to pans. Press into pizza pans and create an edge by rolling edges up a bit.

Season pizza sauce with sugar, salt and pepper and spread on dough. Top with ham, anchovies, mushrooms, artichokes and peppers. Season with salt, pepper and oregano. Cut mozzarella into thin slices and place on pizzas, drizzle with olive oil and bake in oven on the second shelf from the bottom for 20- 25 minutes. Cut into slices and serve.
