40 grams smoked Pancetta (cut into strips)
1 Tbsp thyme
150 milliliters dry white wine

Preparation steps

Clean the artichokes, remove the stem, top third and tough outer leaves. Rinse the artichokes under cool water and pat dry. Peel and finely chop the garlic and the shallots. In a large saucepan, heat 3 tablespoons of oil and saute the shallots.

Arrange the artichokes in the pan and add the pancetta, garlic and thyme. Drizzle with the remaining oil and add the white wine. Cover and simmer over low heat for about 1 hour. Serve on plates with fresh baguette if desired.
