500 grams jam sugar (2:1 ratio)
4 centiliters Rum

Preparation steps

1.

Blanch the apircots in boiling water. Remove the apricots from the water and peel. Halve the apricots, remove the stones, and finely dice. Rinse the lemon under hot water and finely grate the zest. Squeeze the juice from the lemon. Mix the apricots, lemon juice, lemon zest, and the jam sugar in a large saucepan. Set aside and let infuse for 30 minutes, until juice begins to form.

Bring the mixture to a boil, stirring constantly. Cook for 4 minutes, then add the rum and stir to combine. Continue to cook the mixture briefly, until the jam begins to thicken.

Fill the prepared jars to the brim with the hot jam. Seal tightly and cool completely.
