Ingredients

For the pizza dough
550 grams Pastry flour
1 cube Yeast (21 grams) (approximately 3/4 ounce)
1 tsp sugar
2 tsps salt
3 Tbsps olive oil
Pastry flour (for dusting)
For the topping
3 Apple
lemon juice
4 mild, red onions
250 grams Gorgonzola
4 Tbsps olive oil

Preparation steps

For the pizza dough: Place the flour in a mixing bowl, dissolve the yeast and sugar in 150 ml (approximately 2/3 cup) lukewarm water then add to the flour along with the salt and oil and knead until smooth. Transfer to a lightly floured work surface and knead vigorously for 5 minutes. Return to the bowl, cover and let rest for 1 hour in a warm place.

For the topping: Rinse the apples, peel, core and thinly slice. Toss with the lemon juice. Peel the onions, cut in half and then thinly slice. Crumble the cheese.

Preheat the oven to 220°C (approximately 425°F). Divide the dough into 4 pieces and knead again. Roll out each portion of dough on a lightly floured work surface then brush with 1 tablespoon oil. Arrange the apple slices, onions and cheese on the pizza dough and season with salt and pepper. Place on baking sheets lined with parchment paper and bake for about 20 minutes.
