Apple Nut Cake

- 200 grams Walnut
- 250 grams softened butter
- 3 eggs
- 200 grams honey
- 1 Vanilla bean (slit)
- 200 grams Pastry flour
- 1 Apple
- 1 Tbsp lemon juice
- 1 packet Baking powder
- 100 raisins

- 150 grams powdered sugar
- 1 Tbsp lemon juice
- butter (for the pan)
- Pastry flour (for the pan)
Preparation steps
Set aside about 10 walnut halves for decoration aside. Chop the rest coarsely.
Peel and quarter apple, core and cut into small pieces, mix immediately with lemon juice. Whisk butter until creamy, gradually add eggs, honey and vanilla seeds. Mix flour with baking powder and walnuts and add to butter mixture, add raisins and apple pieces and mix well.
Spread batter in a buttered and floured loaf pan and smooth. Bake in preheated oven at 175°C (approximately 350°F) for about 60 minutes. If cake browns too much, cover with aluminum foil.
Remove from the oven and cool slightly. Transfer to a wire rack and cool completely.
Whisk powdered sugar with a little lemon juice into a thick paste and spread cake with it. Decorate cake with walnuts and let dry. Serve.
