Ingredients

For the cream
250 milliliters milk
250 milliliters Whipped cream
1 Vanilla bean
5 egg yolks
100 grams sugar
For the apple fritters
1 egg
1 Tbsp sugar
100 milliliters milk
1 pinch salt
1 tsp vegetable oil
125 grams Pastry flour
½ tsp Baking powder
2 tart Apple
½ lemon (juiced)
butter (for frying)

Preparation steps

1.

For the cream: combine milk and cream with vanilla pod and seeds, bring to a boil and remove from heat. 

2.

Whisk egg yolks with sugar in a bowl until creamy. Slowly add warm cream milk, return to pot and simmer on low heat until thickens, stirring. Remove vanilla pod.

Pour cream into a sauceboat, sprinkle with sugar and cool.

For fritters: combine egg with sugar, milk, salt and oil, mix well. Combine flour with baking powder. add to egg mixture and let stand for 30 minutes.

Heat butter in a pan.

Peel and core apples, cut into 1 cm thick slices (approximately 1/2 inch). Sprinkle with lemon juice. Dip into batter, one slice at a time, and fry until golden brown on both sides. Drain on paper towels. Keep warm while preparing other apple fritters. Sprinkle with cinnamon and sugar and serve with custard.
