- 2 Russet apples
- 3 Tbsps lemon juice
- For the batter
- 150 grams Pastry flour
- 175 milliliters milk
- 2 Tbsps vegetable oil
- 3 eggs
- 1 Vanilla sugar
- ½ tsp grated Lemon peel
- 1 pinch salt
- 2 Tbsps sugar
- clarified butter (for frying)
- Cinnamon sugar (for sprinkling)
- Lemon balm
- Apple (for garnish)

Preparation steps
1.
Peel apples, remove cores and cut into thin slices. Drizzle with lemon juice.
2.
Separate eggs. Mix flour with milk, oil, egg yolks, vanilla and lemon zest. Beat egg whites with salt and 2 tablespoons sugar until stiff and fold into batter. Heat pan and melt about 3 tablespoons of butter.
3.
Divide apple slices into portions and dip into batter, covering generously.
4.
Place apples into pan and fry until golden brown on both sides. Remove and drain on paper towels. Sprinkle with cinnamon sugar and serve garnished with lemon and apple slices.
