Preparation steps

Heat milk in a pot until lukewarm. Place 200 grams (approximately 1 cup) flour in a bowl. Crumble yeast and add to flour along with 50 grams (approximately 1/4 cup) sugar and the lukewarm milk. Mix with a wooden spoon to a thin batter.

Cover with a kitchen towel and let rise until doubled in bulk, about 30 minutes.

Sift the remaining flour over the yeast mixture and knead with dough hook of a hand mixer. Let the dough rise again for 30 minutes.

Meanwhile, peel, quarter and core apples. Cut into thin slices and place in another bowl.

Rinse lemon in hot water, wipe dry, finely grate zest and squeeze out the juice. Mix lemon zest and 2 tablespoons of lemon juice with 50 grams (approximately 1/4 cup) sugar with the apple slices.

Halve vanilla bean lengthwise and scrape out the seeds. Combine vanilla seeds, sour cream, eggs, yogurt and remaining sugar in a bowl and whisk until smooth.

Line a baking sheet with parchment paper. Roll out the dough thinly and place on sheet.

Press apple slices lightly into the dough. Distribute sour cream-yogurt mixture evenly over the top.

Bake in preheated oven at 180°C (fan 160°C, gas: mark 2-3) (approximately 350°F) until golden brown, about 60 minutes. Let cool slightly before cutting into pieces to serve.
