The apple pie contains vitamins, fiber and few fat calories. Milk and dairy products also provide calcium, which is important for bones, teeth, blood clotting, and for the excitability of the muscles.
To save sugar, you can mix sweetener in powder form under the apple wedges.

Heat milk in a pot until lukewarm. Place 1 cup flour in a bowl. Crumble yeast and add to flour along with 1/4 cup sugar and the lukewarm milk. Mix with a wooden spoon to a thin batter.
Cover with a kitchen towel and let rise until doubled in bulk, about 30 minutes.
Sift the remaining flour over the yeast mixture and knead with dough hook of a hand mixer. Let the dough rise again for 30 minutes.
Meanwhile, peel, quarter and core apples. Cut into thin slices and place in another bowl.
Rinse lemon in hot water, wipe dry, finely grate zest and squeeze out the juice. Mix lemon zest and 2 tablespoons of lemon juice with 1/4 cup sugar with the apple slices.
Halve vanilla bean lengthwise and scrape out the seeds. Combine vanilla seeds, sour cream, eggs, yogurt and remaining sugar in a bowl and whisk until smooth.
Line a baking sheet with parchment paper. Roll out the dough thinly and place on sheet.
Press apple slices lightly into the dough. Distribute sour cream-yogurt mixture evenly over the top.
Bake in preheated oven at 350°F until golden brown, about 60 minutes. Let cool slightly before cutting into pieces to serve.
