- 53 ozs Lamb drumstick leg or shoulder (boned)
- 2 Apple (peeled, quartered and finely diced)
- 1 handful Basil (leaves picked and finely chopped)
- 1 ⅓ cups soft Goat cheese
- 2 Tbsps vegetable oil
- 2 sprigs rosemary
- ⅞ cup dry white wine
- 1 ⅔ cups lamb stock

Preparation steps

Preheat the oven to 170°C (150°C in a fan oven), 325°F, gas 3.

Unroll the lamb (or cut into it if necessary). Mix the apple and basil through the goat's cheese and season to taste with salt and ground black pepper. Fill the lamb with the mixture, roll it up and secure it with kitchen string. Season with salt and ground black pepper and brown on all sides in hot oil in a roasting dish. Add the rosemary and deglaze the dish with the wine. Add a little stock and cook in the oven for 2-2.5 hours, turning regularly and adding extra stock as required.

Remove the joint from the sauce, release from the string and serve cut into slices. Add a little cornflour to thicken the sauce if desired, check the seasoning and serve alongside the meat.
