For the salad
4 thin Zucchini
1 small onion
½ garlic clove
3 Tbsps Yogurt (0.1% fat)
2 Tbsps olive oil
2 Tbsps White vinegar
salt
peppers
1 tsp chopped parsley
For serving
shaved Parmesan (to taste)
50 grams toasted Pine nuts

Preparation steps

1.

For the salad: Rinse the zucchini and cut lengthwise into very thin slices. Sprinkle with salt and set aside.

2.

Peel the onion and garlic and chop both very finely. Mix with the oil.

3.

Mix the yogurt and wine until smooth, stir into the onion-oil mixture and season with salt and pepper.

4.

Drain the zucchini, mix with the parsley and yogurt sauce and transfer to plates.

5.

For serving: Sprinkle with Parmesan and pine nuts and serve.
