- 2 Tbsps olive oil
- 1 clove garlic cloves (finely chopped)
- 2 slices white Bread (cubed)
- 2 large Zucchini
- 8 large Radish
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the olive oil in a frying pan set over a moderate heat until hot.
2.
Fry the garlic for a minute or two then add the cubed bread and cook until crisp and golden-brown. Remove and drain on kitchen towel.
3.
Chop the ends of off the courgettes and radishes.
4.
Using a mandolin, slice the courgettes lengthways, then slice the radishes into thin rounds.
5.
Arrange the ribbons of courgettes and radishes on the serving plates, sprinkle over the croutons and serve.
