- 2 medium Zucchini
- 3 Tbsps olive oil
- salt
- freshly ground peppers
- 16 slices Prosciutto
- 2 fresh ripe Figs
- 1 Tbsp butter
- 1 Tbsp sugar
- 1 tsp rosemary
- 2 Tbsps balsamic vinegar
- 4 centiliters Grappa
- 50 grams Parmesan

Preparation steps

Rinse the zucchini and cut on the diagonal into 16 pieces. Heat the olive oil in a pan and saute the zucchini slices on both sides. Season with salt and pepper and wrap each slice with a slice of prosciutto. Rinse the figs and cut into eighths. Melt the butter in a skillet and sauté the fig pieces briefly.

Sprinkle the sugar and rosemary over the figs and cook until lightly caramelized. Deglaze with the vinegar and grappa. Remove the figs from the pan cook the sauce until slightly reduced. Place the pieces of fig on the zucchini slices and drizzle with the reduced sauce. Shave the Parmesan and place on top of the zucchini. Serve immediately.
