1 large Tomato
7 ozs Feta
5 Tbsps olive oil
1 Tbsp lemon juice
coarse, freshly ground peppers
Basil (for garnish)

Preparation steps

1.

Rinse the summer squash, cut off the ends and cut lengthwise into thin slices. Using a deep steamer, place the squash slices in a thin layer of oil. Season with salt and close the lid. Steam for 3-5 minutes until soft.

Rinse the tomatoes and slice thinly. Cut the feta into four equal pieces. Mix the oil with the lemon juice.

Remove the summer squash and allow to cool briefly. Wrap each piece of feta in 2 slices of squash. Lay the tomato slices on 4 small plates. Place a squash roll on each slice and drizzle with lemon oil.

Season with pepper and serve garnished with basil.
