- 3 sour Apple (Granny Smith, peeled and diced)
- 1 Vanilla bean (seeds scrapped out)
- 1 Tbsp lemon juice
- 4 tsps Apple liqueur
- 6 Tbsps Hazelnuts (chopped)
- 4 Tbsps honey
- 1 ⅓ cups low-fat Yogurt

Preparation steps
1.
Place the apples, vanilla seeds, lemon juice and 3 tbsp water into a pot and cook until soft. Purée with a hand blender, stir in the liqueur and leave to cool.
2.
Dry roast the nuts then add the honey and allow to caramelise. Set aside.
3.
Pour the apple mixture into four glasses and cover with the yogurt. Add the nuts and honey and chill for at least 1 hour before serving.
