- For the parfait
- 12 ozs Berry (strawberries, raspberries, blueberries, blackberries)
- 2 Tbsps Strawberry liqueur (or raspberry liqueur)
- 1 ⅓ cups cream (48% fat)
- ⅞ cup Greek yogurt
- 1 Tbsp powdered sugar
- 4 small Meringue (crumbled)
- For the sauce
- 5 ozs Raspberries
- 5 ozs Strawberries
- 2 Tbsps powdered sugar
- 1 Tbsp lemon juice
- To decorate
- halved Strawberries
- mint

Preparation steps
1.
Put the berries into a bowl (halve any large strawberries) and stir in the liqueur. Leave to stand for 2 hours.
2.
Light whisk the cream and yoghurt with icing sugar to taste until thick.
3.
For the sauce: mash the berries with the icing sugar and lemon juice and press through a sieve to remove the seeds.
4.
Layer the cream mixture, soaked berries, meringues and sauce in serving glasses, ending with berries. Decorate with halved strawberries and mint leaves.
