- 2 Tbsps Safflower oil
- 1 shallot (chopped)
- 1 clove garlic cloves (minced)
- 2 ⅔ cups Pumpkin (diced)
- 2 ½ cups vegetable stock
- salt
- White pepper
- 1 pc fresh ginger (1-inch)
- ⅞ cup cream
- 2 Tbsps Crème fraiche

Preparation steps
1.
Heat the oil and sweat the shallot and garlic until translucent. Add the pumpkin to the shallot and garlic and sweat all together for a few minutes. Season with salt and pepper and add the vegetable stock.

Peel and chop the ginger and add to the soup; cover and simmer for about 25 minutes, then add 3 ounces cream and puree the soup. Check the seasoning.
3.
Mix the creme fraiche with the cream and trickle a spiral on top of the soup. Then draw a wooden cocktail stick through the soup from the middle to the edge several times to make the cobweb effect.
