300 grams mixed Wild herb (such as nettle, dandelion, chickweed)
2 Tbsps butter
2 Tbsps Pastry flour
2 scallions
1 finely chopped garlic clove
0.13 l white wine
1 l Vegetable broth
salt

freshly grated Nutmeg
150 milliliters Whipped cream
2 Tbsps Crème fraiche

Preparation steps

1.

Rinse the scallions and cut into rings. Saute the garlic and scallions in hot butter and dust with flour. Deglaze with white wine and broth. Simmer for about 20 minutes, stirring occasionally.

Add the cream and bring up to a boil. Let simmer and then add the herbs. Puree the soup. Stir in the creme fraiche and season with salt, pepper and nutmeg. Serve immediately.
