2 Tbsps Wholegrain Mustard
1 Tbsp honey
4 bone-in, single chop Pork chop (trimmed)
2 Tbsps olive oil
2 cloves garlic cloves (minced)
2 red peppers (sliced)
1 Broccoli (prepared into florets)
2 cups cooked new Potato (sliced)
salt
freshly ground Black pepper

If you have time, leave the pork chops to marinade for up to 1 hour in the fridge.

Preparation steps

1.
Preheat the oven to 200°C (180° fan)|400F|gas 6.
2.
Whisk together the sunflower oil, mustard, honey, and seasoning in a shallow dish. Add the pork chops and coat in the marinade.
3.
Arrange in a roasting tray and roast for 12 - 15 minutes until the pork chops register at least 66°C|155F on a meat thermometer.
4.
As the pork chops roast, heat the oil in a large frying pan set over a medium heat until hot. Add the garlic and peppers, frying for 2 minutes.
5.
Add the broccoli and potatoes. Cover the pan with a lid and cook for 5 minutes until the broccoli is tender. Season to taste with salt and pepper.
6.
Serve the roast pork chops over the vegetables.
