Preparation steps

Rinse the fish, pat dry inside and out and season with salt and pepper. Sprinkle with lemon juice and brush with olive oil. Fill the cavities of the fish with dill. Coat the wooden skewers with butter and slide the fish onto the skewers. Make sure the skewers are long enough to be held over a fire, about 30 cm (approximately 12 inches).

Place the skewers on a grill or hold over a campfire, turning often. Cooking time will depend on the size of the fish, but will generally take about 20-30 minutes.
