- 14 ozs Puff pastry
- 2 Tbsps butter
- 2 onions (chopped)
- 1 garlic clove (chopped)
- 3 cups Mushrooms (sliced)
- 2 Tbsps flour
- ⅞ cup cream (at least 30% fat, 2 tbsp kept back)
- 3 cups Chicken breasts (sliced)
- 2 egg yolks

Preparation steps
1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.

Roll out the pastry into two circles, one as big as the pie dish and one a little bigger.

Heat the butter in a pan and fry the onions and garlic for 2-4 minutes. Add the mushrooms and fry for a further 2 minutes on a high heat, stirring continuously. Season well with salt and ground black pepper.

Mix together the flour and the cream and add to the mushrooms. Add the chicken and bring everything to the boil. Remove the pan from the heat and leave to cool slightly, then stir in 1 egg yolk.
5.
Place the bigger of the two pastry circles in the pie dish and pour the filling on top. Place the second pastry circle on top, pressing the edges together all the way round.
6.
Mix together the remaining cream and the egg yolk and brush onto the pie lid. Pierce with a fork a few times and bake for 40-45 minutes until golden brown.
