- 1 small Green cabbage (about 1 kg)
- 2 onions
- 200 milliliters Vinegar
- 100 milliliters neutral vegetable oil
- 4 Tbsps sugar
- ½ Tbsp salt
- 1 tsp spicy Mustard
- 200 grams Feta
- 80 grams black Olives (pitted)
- 1 tsp thyme
Preparation steps

Remove the outer leaves from the cabbage. Halve the cabbage, and then halve again lengthwise. Remove the core. Cut the cabbage into thin strips using a knife or mandoline and place into a bowl.

Peel the onions and finely dice.

Bring the vinegar, onions, oil, sugar, and salt to a boil in a small saucepan. Remove from the heat, and stir in the mustard. Pour the liquid over the cabbage, and toss well to combine.

Weigh down with a plate and chill overnight in the refrigerator.

Coarsely crumble the feta and drain the olives. Mix both with the thyme. Add to the cabbage mixture and season with salt. Serve the salad in small bowls.
