Mix together the cucumber, red pepper, tomatoes, onion, olives and goats' cheese in a large bowl.

Whisk together the olive oil, vinegar, salt and pepper, until the mixture thickens.

Pour over the vegetables and cheese and mix gently until everything is lightly coated. Sprinkle with the mint. Leave to stand for 30 minutes before serving.
