250 grams dried, white Beans
1 l Vegetable broth (or beef broth)
2 fresh bay leaves
2 garlic cloves
2 onions
200 grams Celery root
150 grams Chorizo
1 Tbsp lemon juice
salt
freshly ground peppers

Preparation steps

Soak beans overnight in a bowl water. Drain next day and add to a pot with vegetable broth, bay leaves and peeled garlic cloves. Peel onions and celery, trim, dice and add to pot. Bring to a boil, cover, reduce heat and simmer for approximately 1.5 hours, while stirring occasionally,  until beans are tender. Add broth as required to reach desired consistency.

Cut chorizo ​​into thin slices and slowly fry in a hot pan until crispy.

Puree soup with an immersion blender and season with lemon juice, salt and pepper. Fill soup bowls with white bean soup. To serve place chorizo on top and serve drizzled with chorizo cooking grease.
